It’s that time again folks! It’s the Weekend! I spent my week preparing for an interview for a postgraduate programme so naturally when I am done with the interview, stress free and relaxed all I want to do is sit back and sip on a delicious cocktail.
This cocktail has been an absolute winner, it’s like the popular guy walking into a room, everyone just wants a piece of it. I made these Quick & Healthy Cranberry Mojitos a few weeks ago for a Sunday lunch and everyone loved it…as in LOVED it. My parents were completely convinced that I was going to make a fortune from these cocktails because they were just so absolutely delicious.
I’m not so sure that I going to receive my life’s earnings from this cocktail, but it is dam good! So instead of trying to become the next billionaire I think i’ll rather just share it with everyone else.
I don’t know what it is that makes the so delicious… I think it’s just the mixture of the simple flavours and the refreshing minty after taste. It truly is a perfect cocktail for summer.
It is also just as delicious without the boozy part, my dad doesn’t drink alcohol and he might have possibly raved about it even more than everyone else. So you could easily whip up a large jug for all the kids coming over and then just add a dash of rum to the “grown-ups” glasses ;). Plus, it’s sugar free which is good for keeping the kids from bouncing of the walls and for the adults trying to watch their health and figures.
The recipe is pretty quick and easy to follow as well. Simply place the xylitol (I used castor xylitol) in a cup or glass with the mint leaves and lemon juice. Using a muddler give it a good “muddling”. This will ensure that all that minty goodness truly reaches its full potential. Then add the cranberry juice and rum(for the adults only), pour this mixture into a glass or jug filled with ice and top with soda water. Sip away!
