It seems like I’m on a bit of a white chocolate roll here… I hadn’t even noticed till right now! After yesterdays White Chocolate & Cranberry Sugar Cookies I’m a little hooked! I really not a big fan of white chocolate on its own, but in or on top of a dessert mmmm… puuurfect! 😉
It is Sunday today, and Sunday’s call for cheesecakes! I love Sundays, everything is so still and quiet and you can feel the whole world relaxing and gaining strength for the next week. I love spending this time on my own in the kitchen baking something delicious for Sunday lunch. Today it is this beautiful White Chocolate Raspberry Cheesecake, because cheesecakes really give me strength for the week ahead haha. I could probably eat cheesecake every day of the week (maybe I should eat it every day, that way I’ll feel powered up all week) ;).
I love the light creamy texture of a cheesecake, the way your spoon moves through the cheesecake filling the hits the crunchy crust at the bottom…mmmm YUM! And this White Chocolate Raspberry Cheesecake is even better than that, because it has that delicious white chocolate layer on the top which is nice and hard when you take it out of the fridge. So the cheesecake is simply beautiful and complex. You start at the top with those beautifully tangy raspberries, then move to the white chocolate layer which cracks as you spoons hits it, then the best part, the cheesecake itself, which is beautifully refined and smooth and refreshing and lastly the crust, crunchy and chewy at the same time. Okay maybe it’s time for another slice ;). I’m telling you this White Chocolate Raspberry Cheesecake is like no other cheesecake you have had before. It is made up of The Best Ever Cheesecake Recipe and a few extra little tangy twists.
