Ingredients & Notes
This pumpkin soup uses a few simple ingredients that you probably already have in your pantry. The ingredients you will need are:
- Pumpkin. Any type of pumpkin will work for this soup recipe.
- Onions. I use white onion but you could also use red onion or shallots if you don't have any white or brown onions.
- Potatoes. You can use any type of potatoes for this soup to make it thick and creamy. When potatoes are boiled and blended it gives soup body and a deliciously smooth texture.
- Vegetable broth. This is preferred but you can also use chicken broth if you don't have vegetable broth.
- Spices and seasoning. Classic pumpkin soup spices which includes ground cinnamon, ground nutmeg, salt, and pepper.
- Heavy cream. This makes the soup deliciously creamy. You can replace it with coconut milk if you would like to make a vegan version of the soup.

- Fried diced bacon
- Chopped fresh herbs
- Seeds and nuts
- A drizzle of cream or yogurt (or alternatively, coconut milk if you are making a vegan version of the soup)

How to make Pumpkin Soup in a Slow Cooker
Using a slow cooker to make soup is a great way to have a delicious meal waiting for you when you come back from work or a day out. Everything is simmered slowly in your crockpot or slow cooker and then only needs a few minutes of blending before enjoying.
To make things even easier, cut up your pumpkin, potatoes, and onions the night before, pop them in the fridge, and then put them in the slow cooker before you head out or start your day.
STEP-BY-STEP INSTRUCTIONS
STEP ONE
Add the vegetables, spices, salt, pepper and broth to the slow cooker.
STEP TWO
Cook on HIGH for 4 hours or cook on LOW for 7 - 8 hours.
STEP THREE
Use a hand-held immersion blender to purée the soup until thick and creamy. This should take a few minutes.
STEP FOUR
Add the cream and stir to combine.
STEP FIVE
Serve immediately or store in an airtight container to enjoy later.
I like to serve my soup topped with a drizzle of extra cream, fresh herbs and seeds, and some fresh crusty bread. But feel free to serve as desired (see recipe post for ideas).
