WHY YOU WILL LOVE THIS SOUP RECIPE
- Full of flavor. This soup is anything but bland! The vegetables combined with aromatic spices make this soup flavorful and satisfying.
- A perfect cozy meal. There's nothing better than bundling up with a big bowl of warm, creamy soup. And this soup is perfect for just that!
- Vegetarian and gluten-free. This soup recipe is a great option for anyone who is looking for a vegetarian and gluten-free soup or meal idea.
- A great meal prep option. Soup is perfect for meal prepping and this recipe can easily be doubled and stored in the fridge or freezer for later enjoyment.
Ingredients Notes & Substitutions
- Pumpkin. You can use any type of pumpkin you best prefer. This recipe also works well when made with butternut squash.
- Potatoes. This is what gives the soup a silky texture. When the potato is boiled and blended it gives the soup body and a deliciously smooth texture.
- Onion and garlic. Gives the soup an aromatic flavor and a deep, savory taste. I use white onion but you could also use red onion or shallots if you don't have white or brown onions.
- Broth. You can use vegetable broth or chicken broth. Just keep in mind that it will no longer be a vegetarian dish if you use chicken broth.
- Cream. Makes the soup rich, creamy, and satisfying. If you want a non-dairy alternative you can use coconut cream instead of heavy cream to make this a dairy-free dish.
- Spices. Salt, black pepper, and a touch of ground cinnamon.
