This delicious and easy to make berry crisp is a real crowd-pleaser! It is a simple recipe that is packed full of tasty berries and has a delicious crunchy oat crumble topping. You can use fresh or frozen berries making it a quick year round dessert!

I love to make a big batch of this mixed berry crisp and then freeze any leftovers for a sweet treat another day. You can also even make this easy berry crisp ahead of time and store it in the freezer for up to a month and then bake it whenever you're ready!

How To Make an Easy Berry Crisp

  • STEP 1: Preheat the oven and grease a small baking dish.
  • STEP 2: Add the berries, sugar, cornstarch and cinnamon to the baking dish. Stir well to mix.
  • STEP 3: Combine the oats, flour, brown sugar and salt in a mixing bowl and stir. Add the cubed butter and work it together with a fork until it forms large crumbles.
  • STEP 4: Sprinkle the oat topping over the fruit and bake!

    • Make the berry crumble ahead of time: You can make the filling, topping, or the whole thing ahead of time. Just keep it covered and refrigerated and bake it whenever you are read - it can be stored in the fridge for up to 3 days or in the freezer for up to a month.
    • Make recipe adaptions to suit your taste: The mixed berry filling can be made with any type of berry - so feel free to use whichever ones you prefer. You can also adapt the amount of sugar in the filling depending on your taste and the sweetness of your berries. The amount of spice can also be altered depending on your preference.
    • Don’t leave out the cornstarch: The cornstarch in the berries mixture really helps to bring the whole filling together so that it isn’t runny. And if you don’t have any cornstarch, you can use flour instead.
    • Allow the crisp to sit for a few minutes before serving. Like a lot of baked desserts, this berry crumble needs a few minutes of resting in order to cool and set properly once it comes out of the oven.

    It is best to store berry crumble in an airtight container. You can then store the berry crumble in the refrigerator for up to five days or in the freezer for up to three months.

    Why is my crumble mix not crumbly?

    The main reason why your crumble will not have the right texture is if your butter is too soft. For the best crumble mix, make sure to use cold butter and then work quickly when you rub in the butter. If it feels more greasy than crumbly, you can place it in the refrigerator for about 10 minutes to firm up the butter.

    This delightful mixed berry crisp is the best way to showcase fresh berries. The crunchy oat crisp topping is the perfect compliment to juicy, sweet berries.

    Ingredients

    Filling

    • 2 Cups Mixed Berries
    • 2 Tablespoons Sugar
    • ½ Tablespoon Cornstarch
    • ½ teaspoon Cinnamon

    Topping

    • ½ Cup Rolled Oats
    • ½ Cup All-Purpose Flour
    • ¼ Cup Light Brown Sugar
    • pinch Salt
    • ¼ Cup Butter cold and cubed

    Instructions 

    • Preheat oven to 350 °F (177 °C) and grease a 9x5 baking dish.
    • Add the mixed berries, sugar, cornstarch and cinnamon to the baking dish. Stir well.
      2 Cups Mixed Berries, 2 Tablespoons Sugar, ½ Tablespoon Cornstarch, ½ teaspoon Cinnamon
    • Combine the oats, flour, brown sugar and salt in a mixing bowl. Stir to mix.
      ½ Cup Rolled Oats, ½ Cup All-Purpose Flour, ¼ Cup Light Brown Sugar, pinch Salt
    • Rub in the cold butter with your fingers until coarse crumbs form.
      ¼ Cup Butter
    • Evenly sprinkle the topping over the berries mixture.
    • Bake 35 - 40 minutes, or until the topping is golden brown and the filling is bubbling.
    • Leave the mixed berry crumble to stand for 5 - 10 minutes so that the filling can set. And then serve as is, or with ice-cream or custard.

    Notes

    BERRIES: Use your favorite mix of fresh or frozen berries.  Some of my favorite combinations are blueberries with strawberries or blackberries with blueberries.
    STORAGE: The crumble can be stored in an airtight container in the fridge for up to five days or in the freezer for up to three months.
