What is a sandwich cookie?
A sandwich cookie consists of two cookies with a filling in the middle that sandwiches them together. The cookies can be all kinds of cookies of different flavors. It is best to use a sturdy and crisp cookie to make a cookie sandwich. The fillings in between the two cookies can be all sorts of yummy things, like buttercream, chocolate ganache, cream cheese, jam, peanut butter, caramel, lemon curd, ice cream, etc.

I prefer using unsalted butter for this recipe - so if you are using salted butter, omit the extra salt that the recipe calls for. It is best to use room temperature butter that is softened but still slightly cool to the touch.
- Caster sugar. Or baker's sugar, adds the perfect touch of sweetness to these cookies with an end result that is not too sweet. You can substitute the castor sugar with granulated sugar - it will just affect the final texture of the cookie.
- Large eggs. The eggs in this recipe gives the vanilla cookies richness and structure. Keep your eggs on the countertop for about an hour before baking so they are at room temperature when you use them.
- Vanilla extract. This important ingredient is what gives these cookies their delicious vanilla flavor. Use the best vanilla extract or vanilla bean paste that you can for best results.

How To Make Easy Vanilla Cookie Sandwiches
To make these easy cookie sandwiches you will need to make the vanilla cookies, make the chocolate ganache, and then assemble the yummy cookie sandwiches. These three simple processes are easy and fun to do.
Make The Vanilla Cookies
- The cookies are made by creaming the butter in a large mixing bowl until it is smooth and creamy.
- Then add the sugar, vanilla extract, eggs, and salt and beat until well combined.
- Next, add the flour and mix with a wooden spoon until a soft dough forms.
- Once the cookie dough is ready, lightly flour your hands, work surface, and a rolling pin. Evenly roll the dough out to a 5mm thickness.
- Refrigerate the rolled-out dough for at least an hour.
- Once chilled, use a cookie cutter to cut dough into desired shapes.
- Arrange the cookies on a lined baking sheet 5cm apart. Bake the cookies for 8 - 12 minutes at 180ºC/375ºF, or until lightly golden brown.
Make The Chocolate Filling
- Heat the cream in a small saucepan over a medium-high heat.
- Once the cream reaches a gentle simmer, remove the saucepan from the heat and pour the hot cream over the chopped chocolate in a bowl.
- Let the hot cream and chocolate sit for 2 - 3 minutes. Then stir until well combined and allow the ganache to cool and thicken, this should take about 30 minutes.
Assemble The Cookie Sandwiches
- To assemble the cookie sandwiches, spread some of the cooled chocolate ganache onto the flat side of one cookie.
- Sandwich with another cookie, and then repeat the processs with all the remaining cookies.
How To Store Cookie Sandwiches
Storing
You can store any leftover cookies in a sealed airtight container or bag on the counter for 2 days, or in the fridge for 5 - 6 days. These cookie sandwiches will stay fresher in the fridge.
Freezing
- Freezing Cookie Dough:
I love freezing extra cookie dough because that way I can pop some cookies in the oven whenever I want! To freeze cookie dough all you have to do is roll the cookie dough into balls and place them on parchment paper. Place the dough in the freezer for 30 minutes. Once the cookie dough balls have firmed up, you can transfer them to a freezer-safe bag or container. The cookie dough will keep for up to 3 months. When you are ready to bake them, simply bake the cookies as directed in the recipe with a couple of extra minutes of baking time.
- Freezing Baked Cookies:
If you want to freeze the already baked sugar cookies for assembling later, allow them to cool completely and then transfer them to a freezer-safe bag or container. Placing them in a single layer may help to avoid any cookies breaking. Cookies will keep well for up to 2 months in the freezer. Once ready to eat, simply thaw them completely at room temperature and then add the ganache filling and enjoy!
- Freezing Assembled Cookie Sandwiches
Another option is to freeze the cookies sandwiches after you’ve assembled them with their filling. To do this, place the cookie sandwiches in a single layer in a freezer-safe container and separate each layer with wax paper.
