Choc Chip Thermomix Cookies
I love baking cookies - and chocolate chip cookies are always a winner. This classic biscuit is easy to make and is the perfect sweet treat. I love enjoying a couple with a cup of tea or a glass of milk!
Making chocolate chip cookies in your Thermomix is quick and easy. You can whip up a batch of these delicious cookies in just minutes and this recipe is pretty much fool-proof and uses standard pantry-staple ingredients.
Once these delicious choc chip cookies are baked, they are crisp on the outside and slightly chewy in the middle. And they are of course full of chocolate chips in every yummy bite!

Ingredients & Notes

- Butter. I like to use salted butter when making cookies. If you only have unsalted butter, add a pinch of salt to the recipe to enhance the flavor of the cookies
- Sugar. This recipe uses a combination of granulated sugar and brown sugar to give the cookies the best flavor and texture.
- Vanilla extract. Adds a yummy vanilla flavor to the cookie. You can substitute with vanilla bean paste if preferred.
- Eggs. It is always best to bake with room temperature eggs.
- All-purpose flour. I recommend using an unbleached, all-purpose flour to make these chocolate chip cookies. You could replace it with 1:1 gluten-free flour for a GF option.
- Baking soda. This is what helps the cookies rise slightly while baking to create the perfect, light cookie texture.
- Chocolate chips. You can use dark chocolate or milk chocolate chips for this recipe. If you don't have any choc chips, you can simply substitute it with chopped chocolate.
- Tahini (optional). This optional addition gives the choc chip cookies a rich nuttiness which is absolutely delicious.
OPTIONAL ADD-INS
- Chopped nuts, such as hazelnuts, pecans, or walnuts.
- Raisins or currants.
- A sprinkle of coarse salt over the top of the cookies before baking.
- A small dash of almond extract, orange extract, or caramel extract.
How To Make Chocolate Chip Cookies with a Thermomix
STEP ONE
Preheat your oven to 170C / 150C Fan / Gas Mark 3. Line a baking tray with baking paper or spray with non-stick spray. Set aside.
STEP TWO
Place the butter in the Thermomix mixing bowl. Melt 1 Minute / 60C / Speed 2.
STEP THREE
Add the sugars, vanilla extract, eggs, flour, optional tahini, and baking soda. Mix 30 Seconds / Speed 6.
STEP FOUR
Add the chocolate chips (or chopped chocolate) and use a spatula or wooden spoon to gently incorporate by hand. This will prevent the choc chips from getting crushed and from overmixing the dough.
STEP FIVE
Place large scoops (about 1 tablespoons worth) of the cookie dough rolled into balls onto the tray. Make sure you space the balls apart well as they will spread during baking.
STEP SIX
Bake in the oven for 15 - 18 minutes or until lightly golden brown. They will still feel soft straight from the oven, but they will firm up quickly as they cool.
STEP SEVEN
Enjoy immediately or store in a air tight jar or container for up to one week.
Recipe Tips and Notes
- If you don't have any chocolate chips, you can easily use chopped chocolate instead in this recipe. Chunks of chocolate will work just as well!
- Measuring your flour correctly is very important to making the best choc chip cookies. Using a kitchen scale to measure your flour is the most accurate method. But you can also use the spoon and level method. This is where you spoon the flour into a measuring cup and then use a straight edge to level off the excess.
- Remember to preheat your oven for at least 10 to 15 minutes before baking and use an oven thermometer to accurately check the temperature. Bake your cookies for 10 - 12 minutes if you prefer a soft texture, and if you like chewy cookies with crisp edges, bake for 13 to 15 minutes.
How to Store Your Thermomix Cookies
You can store the baked cookies in an airtight container or bag. The cookies can be stored at room temperature for 7 - 10 days. Or you can store the sealed cookie dough in the fridge for up to four days.
This cookie dough can be frozen and saved to bake at a later stage. All you need to do is roll out the dough and form it into balls. Then place the balls of dough on a lined sheet pan and freeze for 1 hour, or until the cookie dough balls are hard enough to be transferred to a zip-lock bag without them losing their shape.
Seal the bag and freeze for up to 3 months. They can then be baked whenever you desire, just add 3 minutes to the total bake time!
