The last couple of weeks the weather has been so incredible. It is as if summer just decided to arrive early and surprise us all. People are wearing their itty bitty shorts and cocktails are being made. Mmmm I just love summer! So I decided that I’ll just embrace this early summer, even if it does decide to only stay a while, which meant the logical thing was to make Ice-Cream.
I’d heard of this thing called Avocado Ice cream before, but to be honest it really didn’t sound very delicious. Oh was I wrong!! It is so scrumptiously deliciously creamy!! I am in-love! And i’m not even a big ice-cream eater. It obviously tastes like avocado, but not in the usual way, its flavour is very subtle and light. And the fact that it’s Vegan Avocado Ice cream makes it even more amazing, because I didn’t expect it to be so creamy. But the coconut cream really does the trick, not only does it make the ice-cream super creamy, but it also adds a heavenly but subtle coconut taste. This ice-cream tastes like an island holiday!
The ice-cream is also vegan, sugar-free, low-carb and probably every other health label you can think of. It is really the perfect summers day indulgence.
I don’t have one of those fancy ice-cream maker, I just used my little Krups machine, which is basically just a bowl you put in the freezer which then churns the ice cream. If you don’t have a ice cream machine, I would recommend just putting the mixture into a bowl in the freezer and then constantly stirring the mixture with a fork or whisk every 30min or so. The process of making the ice-cream is really easy. As with most of my recipes, I just chucked all the ingredients into the blender and blended it until it was smooth, I then placed the mixture in the ice-cream machine and waited until it turned into ice cream. I usually then take the ice-cream out of the machine when it is ready and the put it in a tub in the freezer so that it can harden a bit more.
