2016 has been so good to me already! I received THEE most amazing news yesterday. I WON a full scholarship to go live out my dream… which is to become a Pastry Chef of course!! Can you believe it! I was so incredibly shocked…okay I’m still shocked! Capsicum Culinary Studio has pretty much always been my dream chef school and they held a competition to give away a bursary. Now this wasn’t just any competition. In order to win the bursary Capsicum made a little challenge (okay it wasn’t that little). The challenge was to create your very own recipe using watermelon! WATERMELON? sounds pretty easy right?… wrong! Yes, I could’ve gone with a watermelon salad, or a watermelon cocktail but that doesn’t quite say “HAY I’M A PASTRY CHEF” !! So I really wanted to impress the awesome chefs at Capsicum, and well apparently I did! I made this delicious 3 Layered Watermelon Gelatin Cubes as well as the Coconut Watermelon Ice Cream. I really went all out with the watermelon theme and I am absolutely over the moon that it worked out! I can’t wait to get started!
Okay… enough about me! Let’s move on to the real reason why we are all here… this decadently delicious Salted Caramel Chocolate Tart. Honestly I can’t imagine anything more satisfying than cutting into this beauty and watching the caramel pour out then slicing through that gorgeous chocolate ganache layer only to reach a heavenly chocolate crust.
This Salted Caramel Chocolate Tart is pure heaven! It didn’t last 5 minutes in my house, everyone had gobbled it up within seconds, licking up all the crumbs they could find. It’s THAT good!
The best part about this Salted Caramel Chocolate Tart… it’s easy to make. Seriously easy to make. It’s a matter of making the crust, which literally consists of chucking all the ingredients into your blender. Then making the chocolate ganache, which is also easy because all you have to do is melt the chocolate in the microwave together with the cream. And lastly, you make the Salted Caramel, which is the hardest part, which isn’t difficult at all.
This recipe is awesome because with a few swops here and there, you can make it a VEGAN Salted Caramel Chocolate Tart. Sounds impossible and heavenly right? So pay attention… All you have to do is replace the butter in the crust with cold/hard coconut oil. Replace the cream in the ganache layer with coconut milk, and lastly make this DELICIOUS Vegan Salted Caramel! Voila! There you have it, a Vegan Salted Caramel Chocolate Tart.
