I’ve been slightly obsessed with salted caramel and literally everything I eat has to be something that can be topped with that glorious creamy caramel. So needless to say, my next recipe HAD to be something that would work with vegan salted caramel of course.
Around this time of year, everything seems to start involving these delicious warm flavours like cinnamon and caramel. And although over….here in South Africa where it’s pretty damn hot and all you want to do is eat things like coconut popsicles and drink cocktails, the warm spicy flavours still seem to give a sense of celebration and holidays. There’s something about these warm flavours that seem to bring a sense of togetherness and family. Which is what the holidays are all about right?.
These Healthy Apple & Cinnamon Muffins are exactly what is needed pre-holiday season. They are light and moist and… well they’re super healthy and delicious. It is as if a whole world has opened up in front of me since I started experimenting with all these healthy desserts. Because it is just SO exciting when you make something that’s meant as a dessert but it’s so insanely healthy that you could probably eat it for breakfast. OR even better when you actually make something for breakfast like a Salted Caramel Chia Pudding and you end up making an extra one for dessert!!
I mean it is actually bonkers!!! I’m not saying we shouldn’t be eating Chocolate Mousse(because that is a dietary requirement) or whatever other scrumptious desserts, BUT it is actually so incredibly easy to eat desserts that are wholesome and healthy. AND that don’t taste like cardboard.
Moving on to these magnificent Healthy Apple & Cinnamon Muffins. They are pretty simple to make and you could seriously eat them for breakfast, as a snack or chuck on some Vegan Salted Caramel and have it for dessert.
To make them all you do is mix the flour (I used Oat Flour), baking powder, cinnamon, nutmeg,mixed spice, coconut sugar and salt. When you’ve mixed all the dry ingredients, add the milk, you can use normal milk otherwise use Almond Milk, coconut oil, eggs (or flax eggs) and vanilla. Mix the wet and dry ingredients well and then add the grated apple. Mix until the apple is just incorporated.
