Hummus has become my go to for lunch nowadays. It’s just so perfect when you are to lazy to make something tasty, so I usually just make a chicken breast with some salad and then slap on some hummus or I make some mixed roasted veggies with quinoa and then again just mix in some delicious hummus. But I did start getting a little bored with my usual plain hummus. So I thought I would play around a bit with some colourful veggies.
My ultimate favourite is the Beetroot&Honey Hummus, which is first of all so beautiful because of it’s bright colour, but it also just goes so perfectly with everything because it has this tiny bit f sweetness that really just adds to any dish or even simply as a dip.
Don’t get me wrong the other two are just as delicious. The Carrot&Cumin hummus has a lighter flavour, it’s not incredibly over powering so it’s perfect for everyday because you honestly can’t get sick of it. The Tomato hummus has a delicious tangy flavour which is delicious on some fresh bread, topped with salad.
All 3 recipes are so incredibly easy to make. I start by making a normal hummus and then I just add the various ingredients for each one. For the Beetroot&Honey Hummus, I microwaved a beetroot and then added the beetroot and honey into the blender with some of the plain hummus. For the Carrot&Cumin hummus I also simply microwaved the carrots and then added some cumin as well as some extra lemon juice into the blender with the carrots and plain hummus. The tomato hummus was slightly more time consuming because I had to bake the rosa tomato’s for 20min before adding them to the blender with the plain hummus.
