Today is such a beautiful cosy day. It is dark, cold and rainy. My favourite kind of day. I love it when the weather decides to give you a break from life. It’s the worlds way of saying; “Hay why don’t you chill out today, drink some hot chocolate and binge watch your favourite series”. Maybe it’s just me, but I LOVE rainy days. I always feel so inspired to stay indoors and get a little creative or bake (of course). Today I clearly decided to bake ;).
These Baked Carrot Cake Donuts are so yummy, comforting and perfect for a day like today. They truly taste like carrot cake, they have the texture of carrot cake and the glaze of a carrot cake. Okay, they are pretty much carrot cakes with holes in them ;). Carrot Cake is quickly become one of my all time favourite desserts, I love the combination of textures it has to offer, from the moist, almost chewy centre, to the smooth cream cheese frosting or glaze and the lastly a few crunchy nutty surprises. What more could you want from a cake right?
I am a bit of a spice fundi, from Chai Cupcakes to Cinnamon Carrot Cookies and now these yummy Baked Carrot Cake Donuts that have just the right amount of cinnamon in them to make them absolute perfection! The best thing about them… they are not at all fatty like most donuts are, which means you could totally scoff down a few of them without feeling too guilty. They are also incredibly easy and quick to make and they only bake for about 10-12min, which means when the carrot cake calling calls, you won’t have to wait too long to satisfy that calling. If you don’t already have a Donut Pan, do yourself a favour and invest in one. It is one of the best things I have ever bought and I use it all the time!
