I like to top my classic vanilla cupcakes with citrus buttercream - but feel free to top the cupcakes with any preferred frosting. They are even delicious simply with a dusting of powdered sugar.

- Butter. I prefer to use salted butter as it balances and enhances the flavor of the cupcakes, but you could also use unsalted butter if preferred.

- Eggs. I use large, room-temperature eggs for best results.
- Whole milk. I prefer whole milk or 2% milk, but you could use any type of milk you like best.
- All-purpose flour. I haven't made these cupcakes gluten-free before, but you could use a 1:1 gluten-free flour if you follow a gluten-free diet.

How To Make Vanilla Thermomix Cupcakes
Making these homemade fluffy Thermomix cupcakes from scratch is unbelievably easy. It is a simple recipe that takes almost no time at all to make.
Step-by-step Instructions
STEP ONE
Pre-heat your oven to 180C / 360F. Line a muffin tray with paper cupcake liners.
STEP TWO
Add the sugar to your Thermomix bowl. Mill for 10 seconds / speed 8.
STEP THREE
Add the butter and vanilla extract to the bowl. Cream for 30 seconds / speed 4.
STEP FOUR
Add the eggs, milk, flour, and baking powder. Mix for 20 seconds / speed 5.
STEP FIVE
Divide the mixture into the prepared muffin tin. Be sure to only fill each liner ⅔ of the way full to prevent cooking over while baking.
STEP SIX
Bake in the oven for 20 minutes, or until a toothpick comes away clean when inserted into the middle of a cupcake.
STEP SEVEN
Allow the cupcakes to cool for a couple of minutes before transferring them to a cooling rack. Then allow them to completely cool before frosting.
Decorating Your Vanilla Citrus Cupcakes
For my zesty frosted cupcakes, I like to decorate them with fresh leaves and orange zest twits. But there are many other decoration options to make your cupcakes extra beautiful and special:
- Sprinkles. Can't beat a classic cupcake topping! Sprinkle your frosted cupcakes with your favorite sprinkles.
- Orange marmalade. Add a little water and melt it down and then drizzle it over your cupcakes.
- Orange segments. Remove skin and place a couple of segments on each cupcake.
- Candied orange peel. Add a sprinkle to each cupcake for a pretty and delicious decoration.
Can I Make the Frosting Ahead?
Yes. you can make your frosting ahead of time! The frosting will last for 3 - 5 days if covered and refrigerated. When you want to use the frosting, simply bring it back to room temperature on your counter and then stir it until smooth and use it like you normally would.
Storage Instructions for Thermomix Cupcakes
I find storing these cupcakes in the fridge is best. This will keep them fresher for a longer period of time. When you want to serve them, you can then eat them cold or take them out and place them on the counter and allow them to reach room temperature.
You can also store the cupcakes in an airtight container at room temperature for up to 5 days.
These cupcakes can also be frozen. Just place them in an airtight container in the freezer for up to three months. Just allow them to completely thaw at room temperature before serving.
