How To Make Citrus Cupcakes
Making these fluffy cupcakes from scratch is unbelievably easy. It is a simple, one-bowl recipe that takes almost no time at all to make. Just follow these 5 simple steps:
- In a mixing bowl, beat the oil, eggs, sugar, and vanilla essence together until light and fluffy.
- Then gently mix in all the dry ingredients, milk, and orange zest. It is important to not overmix.
- Line a muffin pan with cupcake liners and fill each cupcake cup until ¾ full.
- Bake the cupcakes for 10 - 15 minutes at 180°C.
- Let the cupcakes cool completely before frosting.
To Make The Zesty Frosting:
- In a mixing bowl, cream the butter until light and fluffy.
- Beat in the icing sugar and orange zest.
- Pipe the frosting onto cooled cupcakes and enjoy!

Decoration Ideas For Your Orange Cupcakes
For my zesty cupcakes I used fresh leaves and orange zest twits to decorate them. But there are many other decoration options to make your cupcakes extra beautiful and special:
- Fun Sprinkles. Can't beat a cupcake classic!
- Orange Marmalade. Add a little water and melt it down and then drizzle it over your cupcakes.
- Orange Segments. Remove skin and place a couple of segments on each cupcake.
- Candied Orange Peel. Add a sprinkle to each cupcake for a pretty and delicious decoration.

Storing Citrus Cupcakes
If you don't eat them all up immediately, I find storing these yummy cupcakes in the fridge is best. This will keep them fresher for longer. When you want to serve/devour them, you can then eat them cold or take them out and allow them to reach room temperature.
These cupcakes can be frozen. Just place them in an airtight container in the freezer. Just allow them to completely thaw at room temperature before serving. I recommend not keeping them in the freezer for longer than three months.
