So what is Lemon Curd?
Lemon curd is a very rich citrus spread that can be used for topping desserts, dessert fillings, or simply as a deliciously creamy spread. It’s buttery and sweet with an intense tart, zesty lemon flavor.
Traditionally made from fresh lemons, sugar, eggs, and butter, it is a bit like a creamy lemon version of jam. Lemon curd is made from a few simple ingredients and it comes together quickly by heating gently.

Homemade Thermomix Lemon Curd
Making homemade lemon curd with your Thermomix couldn't be easier! It is such a simple and quick recipe that has a delicious and versatile end result.
This homemade lemon curd is all-natural. It contains no preservatives, artificial colours or flavour. This is what makes it tastes so much better than shop-bought and makes it healthier for you to enjoy.
Making lemon curd in a Thermomix is so much easier than the traditional stovetop method of making curds. All you have to do is add the ingredients to the Thermomix bowl and then the machine does all the work.
This makes this recipe almost fool-proof as there is no chance of burning the curd or accidentally scrambling the eggs. Instead, you are guaranteed a smooth and creamy curd bursting with zesty lemon flavor that can be used in so many different ways.

Ingredients you'll need & notes

- Eggs. You only need the egg yolks to make lemon curd. They are what thickens the curd. Separate the whites and freeze them for later use, such as in making Swiss Meringue Buttercream or Pavlovas.
- Lemons. This recipe is all about lemon flavor so we will be using both the juice and the rind. Do not use bottled lemon juice. Use fresh-squeezed lemon juice for best results.
- Butter. You can use unsalted butter instead of salted butter but if that is what you have. I then advise adding a ⅛ teaspoon of salt to the recipe to balance the curd and enhance its flavor.
- Sugar. Only use white granulated sugar for this recipe. You can't use brown sugar as it will change both the flavor and color of the final lemon curd.

How to make lemon curd using a Thermomix
STEP ONE
Remove the rind from the lemons by using a peeler. Place the rind and the sugar into the Thermomix bowl.
STEP TWO
Finely grate on Speed 10 for 15 seconds. Scrape down the sides of the bowl using a spatula and repeat the process until only a very fine zest remains.
STEP THREE
Add the eggs, egg yolks, butter, and lemon juice to the bowl. Cook on Speed 4 for 10 minutes at 80 degrees.
STEP FOUR
Check the consistency of the lemon curd and if you would like a thicker curd, cook for a further 2 minutes on Speed 4 at 90 degrees.
OPTIONAL STEP
Pour the lemon curd through a fine strainer to remove any remaining lemon zest.
STEP FIVE
Place the lemon curd into a sterilised jar and allow to cool before using or store in the fridge for up to two weeks.

Recipe Notes and Tips
To sterilise your jars, you can boil them in a saucepan of boiling water for 10 minutes and then set them aside to dry and cool. Alternatively, you can wash your jars well with warm soapy water, rinse them off and then place them in an oven at 120C / 250F for 10 minutes.
It is best to cool the cooked lemon curd for half an hour at room temperature before you seal the filled and sterilised jar and place it in the fridge.
Personally, I don’t strain this lemon curd. You can ensure the zest is very tiny by using the Thermomix and once it has been cooked, you can hardly detect its texture. However, feel free to run the cooked lemon curd through a fine mesh sieve if you so desire.

Storage Instructions
This Thermomix lemon curd will keep in the refrigerator in sealed jars for up to 3 weeks if unopened. Once opened use it within 10 days.
This lemon curd can be frozen for up to 3 - 6 months and then you can thaw it in the refrigerator overnight before using it. A helpful tip is to freeze it in ice cube trays and then once frozen you can transfer the cubes to an airtight container. This will help you to be able to defrost just as much as you need at a time.

- 190g granulated sugar
- 120g lemon juice (approximately 3 lemons)
- 135g salted butter, cubed
- 4 egss
- 2 egg yolks
Instructions
