  • Baking Powder. For a light and fluffy cupcake texture.
  • Whole milk. Keeps the cupcakes deliciously moist.
  • Oil. Vegetable or canola oil will work best.
  • Vanilla extract. Adds the delicious vanilla flavor to the cupcakes.

How To Make Easy Fluufy Vanilla Cupcakes

This simple cupcake recipe is straightforward and easy to make. Whipping up a batch of these delicious vanilla cupcakes is quick and easy. To make these easy, one-bowl vanilla cupcakes:

  • Prepare oven and pan. Preheat your oven to 180ºC / 350ºF and line a cupcake pan with cupcake liners.
  • Cream eggs, sugar, and vanilla. Using an electric mixer or a stand mixer, cream the sugar, eggs and vanilla together until light and fluffy - about 4-6 minutes.
  • Combine remaining ingredients. Add the remaining cupcake ingredients and mix on low until just combined.
  • Fill the cupcake pan. Spoon the cupcake batter into the cupcake liners, filling them about ⅔ of the way. Be careful to not overfill your liners.

Ingredients

For The Cupcakes

  • ¾ Cup Sugar
  • 1 ½ Cups Cake Flour
  • Pinch Salt
  • 2 Eggs
  • 2 teaspoon Baking Powder
  • ½ Cup Milk
  • 1 Cup Oil
  • 2 teaspoon Vanilla Extract

For The Frosting

  • 1 Cup Butter softened
  • 5 Cups Powdered Sugar
  • 5 Tbps Cocoa Powder
  • 3 Tbps Milk
  • 2 teaspoon Vanilla Extract

Instructions 

For The Cupcakes

  • Preheat the oven to 180ºC or 350ºF and line a cupcake pan with cupcake liners.
  • Cream the sugar, eggs and vanilla together.
  • Add the remaining ingredients and mix until completely combined.
  • Spoon the mixture into the cupcake liners, filling them about ⅔ of the way.
  • Bake the cupcakes for 15min or until golden brown.

For The Frosting

  • Cream the butter and vanilla.
  • Add in the powdered sugar little by little.
  • Add in the cocoa and milk (adding more milk if necessary).
  • Keep whisking until creamy and completely combined.
  • Decorate cooled cupcakes with frosting.
