Honey simple syrup is easy to make at home and is a hugely versatile ingredient. You can add honey syrup to all sorts of dishes, baked goods, marinades, and drinks.
Honey syrup is a natural sweetener that adds rich complex flavor and sweetness when added to dishes and drinks. Refined sugar and most other sweeteners tend to just make things taste sweeter only.
Making honey simple syrup is cheaper than buying it from a store. And it also allows you to be fully in control of what goes into it as some store-bought versions often have additives and preservatives in them.
Using honey in a simple syrup, rather than by itself, is also a lot easier to use. It doesn’t make everything around it sticky – which can easily happen when you use honey straight from a jar.

You only need two ingredients to make honey simple syrup. It is such an easy thing to make that is so worth having as a staple in your kitchen! The ingredients you will need are:
- Honey. The best part about making your own honey water is that you can choose the honey you make it with! Different varieties of honey and those harvested at different times of year will have different strengths and flavor nuances. So choose a honey you like best to make your syrup from it! The honey can be store-bought, raw, or locally produced - the choice is yours.
- Water. I like to use filtered water to make my syrup so that it is pure and adds no additional flavor to the syrup.
Honey Simple Syrup Ratio
The classic ratio for honey syrup is 1:1. Which means that equal parts of honey and water are used. This ratio creates a liquid texture with a runny consistency. But you are free to adjust the ratio according to your preferences.
And we also suggest that before you make your syrup, you should taste the honey you’re using and then adjust the proportion of honey to water accordingly. This is because milder kinds of honey may be best with a two-to-one ratio of honey to water.

How to Make Homemade Honey Simple Syrup
With just two ingredients, this recipe is so quick and easy to make. You can find a full recipe card at the bottom of this page or follow the step-by-step instructions below:
STEP ONE
Place the honey and water into a small saucepan over medium-low heat.
STEP TWO
Allow to heat until the honey becomes liquid, about two minutes. Do not boil.
STEP THREE
Place in a heat-proof jar with a tight-fitting lid. Let it come to room temperature on the kitchen counter and then store it in the fridge.

- It is impossible to dissolve honey in a cold liquid. Rather you have to thin it out in warm water. However, you shouldn't ever boil it. Excessive heat can have detrimental effects on the nutritional state of honey.
- Milder kinds of honey may be best with a two-to-one ratio of honey to water. Taste the honey you’re using and adjust the proportion of honey to water accordingly.
- This syrup can be used as a substitute for white sugar in many recipes. But you may need to add slightly more syrup than what’s called for in recipes requiring pure honey or white sugar.
Storage Instructions
Honey simple syrup will last for up to one month in the fridge when stored in an airtight container.
Recipe Variations and Infusions
