Easy Thermomix Cinnamon Rolls Recipe
Cinnamon rolls are a well-loved baked good all over the world. There are many different names for cinnamon rolls - such as Cinnamon Buns, Cinnamon Scrolls, Cinnamon Danish, and Cinnamon Swirls.
Making this popular, classic sweet treat is so easy when using a Thermomix. There are quite a few steps to making cinnamon rolls but it is so worth it all. And the Thermomix helps to make the process fool-proof.
These traditional cinnamon rolls have a soft, fluffy texture with a rich, buttery dough. The brown sugar cinnamon filling is sweet and spiced and can be customised to your exact preference.
And when these delicious buns are topped with the creamy vanilla cream cheese frosting it creates the most delicious sweet treat. You'll definitely be making these cinnamon rolls more than once!

Ingredients & Notes
- Whole milk. Whole milk or 2% milk is best for this recipe - but you can also use any other milk you prefer.
- Butter. I use salted butter to make these cinnamon rolls. You can use unsalted butter too, but then add ¼ teaspoon of salt to the recipe.
- Granulated sugar. To give the rolls a touch of sweetness.
- Yeast. I use fast active dried yeast (aka quick or instant rise yeast) to help the dough rise and give the rolls a light texture. Follow the package directions for your yeast exactly as written.
- Bread flour. This type of flour is easy to find in stores and has a high protein level to help lighten the baked cinnamon roll texture. The higher amount of protein produces more gluten, which in turn gives the cinnamon rolls the chewy, soft texture you know and love. You could also use all-purpose flour but this will result in a different texture.
- Egg. This recipe calls for 1 egg and 1 egg yolk to give the perfect texture and rich consistency to the dough. Remember that room temperature eggs are best for baking.
- Cinnamon Filling. Butter, brown sugar, and ground cinnamon. There are also many optional add-ins that you could include such as chocolate chips, raisins, chopped nuts, etc.
- Cream cheese frosting. Butter, cream cheese, vanilla extract, and powdered sugar (icing sugar).
Frosting Alternatives
I like to top my sweet buns with a tangy cream cheese frosting but you can use any type of frosting you like best. Flavors like maple, brown sugar, and caramel pair well with the cinnamon rolls. If you like a yummy fruity twist, try my Raspberry Buttercream Frosting!
Alternatively, you can simply dust the buns with powdered sugar or make a simple glaze by combining 150g of powdered sugar mixed with a little water.
How to make Cinnamon Rolls with a Thermomix
STEP ONE
Add the milk, butter, sugar and yeast into the Thermomix bowl and heat for 3 minutes/37°/speed 2.
STEP TWO
Add the flour and eggs and mix for 15 seconds/speed 6.
STEP THREE
Scrape down the bowl then knead the dough for 5 minutes/knead function.
STEP FOUR
Place the dough onto a lightly floured surface and knead into a ball - about 1 minute. Transfer to a large greased mixing bowl and cover with a tea towel or plastic wrap. Leave in a warm place to prove for 2 hours. The dough should almost double in size.
STEP FIVE
Remove the dough from the bowl and knead it again on a floured surface to knock out any air bubbles. Return it to the greased bowl, cover again, and leave to prove for a further 30 minutes.
STEP SIX
Transfer the dough onto a lightly floured surface and using a rolling pin, roll into a large rectangle that measures approximately 25cm x 40cm.
STEP SEVEN
To make the cinnamon filling, mix together the butter, brown sugar, and cinnamon in the Thermomix bowl for 2 minutes/37°/speed 3 until melted. Spread the cinnamon mixture evenly over the rolled-out dough.
STEP EIGHT
Start to roll the dough tightly into a log shape starting at the long end. Once rolled, use a sharp bread knife to cut into 12 even slices.
STEP NINE
Place the rolls down flat 2cm apart on a baking tray lined with baking paper. Cover with a tea towel and leave to rise in a warm place for 30 minutes.
STEP TEN
While the rolls are rising, preheat your oven to 190°C/ 170°C. When ready, bake the rolls for 25 - 30 minutes, or until lightly golden.
Storage Instructions
You can store your freshly baked cinnamon rolls covered at room temp for 1 - 2 days. Or alternatively, you can keep them in the refrigerator for up to 5 days.
Simply reheat your cinnamon roll in the microwave to get them soft and gooey again before serving. Be careful to not heat them up too much though as the frosting will melt and the sugar will become hot!
WHAT’S THE DIFFERENCE BETWEEN CINNAMON BUNS AND CINNAMON ROLLS?
So cinnamon rolls and cinnamon buns are actually almost the same things. Cinnamon rolls (or buns) originate from Sweden and traditionally contain cardamom in the filling. Cinnamon rolls are usually finished with a glaze or frosting made with powdered/icing sugar and cream cheese – like in this recipe!

- 50g soft brown sugar
- 3 teaspoons ground cinnamon
- CREAM CHEESE FROSTING
- 450g powdered sugar
- 100g butter
- 100g cream cheese
- 50g milk
- 1 teaspoon vanilla extract

CREAM CHEESE FROSTING
- Add the powdered sugar to the Thermomix bowl. Mill for 15 seconds/speed 9. Set aside.
- Add the butter and cream cheese to the Thermomix bowl and mix to soften for 15 seconds/speed 5.
- Add the milk, vanilla extract, and prepared powdered sugar. Mix for 40 seconds/speed 5.
- Frost the cooled cinnamon rolls and enjoy.
