A Vegan Beet Burger made from chickpeas and fresh raw beetroot that can be pan-fried, baked, or grilled. This vegan burger patty is a beautiful bright pink color and packed full of protein and flavor!
Beets are so fun to cook with as they add such pretty vibrant color to any meal! I love adding beets to smoothies, and I have even made a beetroot latte which is oh-so-pretty and yummy! Beets are such special vegetables. They make everything beautiful and are also packed full of nutrients.
Are beets good for you?
Beets are root vegetables that are filled with antioxidants and anti-inflammatory properties. Eating beetroot is a great way to detoxify the liver, reduce blood pressure, and increase energy levels. Beets contain many essential nutrients such as:
- Iron
- Nitrate
- Potassium
- B vitamins
- Folate
- Vitamin C
- Magnesium
Ingredients you’ll need:
- Beets: grated fresh raw beets that add vibrant color and healthy nutrients
- Walnuts: extra boost of protein and nutty flavour
- Rolled Oats: help to bind the patties by absorbing excess moisture from the beets
- Flax Powder: adds tons of nutients and helps to bind the patties and keep their shape
- Chickpeas: adds protein to the burger and gives them a great texture
- Soy sauce: for that yummy umami flavor
- Garlic: use fresh garlic to add that unbeatable flavor
- Spices: dried rosemary, dried oreganum, red pepper flakes, salt, cracked black pepper
How to make Vegan Beet Burgers:
- Preheat oven to 400F and line a baking sheet with parchment paper.
- Add the nuts, oats, spices, and flax powder to a food processor and mix to form a powder.
- Add all the remaining ingredients and mix to combine. (It’s ok if there are a few small pieces of beets and chickpeas, this will add some texture to the patties.)
- Shape into patties and bake for 15 - 20 minutes per side
- Serve on a bun with your favourite toppings.

TO GRILL:
Clean and oil your grill and heat to 350F. Rub some oil onto the burger patties, and then grill on medium heat for 5 - 8 minutes per side until well grilled on the outside and cooked through on the inside.
TO PAN-FRY:
Heat 2 tablespoon of olive oil in a large skillet on medium-high heat. Once the oil has heated, reduce heat to medium and add the burger patties to the pan and let them cook for 5 - 6 minutes per side until golden and cooked through.

How to store vegan beet patties
- Fridge: You can store leftover patties (cooked or uncooked) in the fridge for up to 5 days.
- Freezer: You can store uncooked patties in an airtight freezer bag in the freezer for up to 2 months. Allow the patties to defrost on a counter before cooking.

- 1 ½ cups rolled oats
- ½ cup flax powder
- 1 ½ cups chickpeas
- 2 teaspoon dried rosemary
- 2 teaspoon dried origanum
- 1 teaspoon red pepper flakes
- Salt & pepper to taste
- 2 tablespoon soy sauce
- 4 cloves garlic
Instructions
1. Preheat oven to 400F and line a baking sheet with parchment paper.
2. Add walnuts, oats, flax powder, and spices to a food processor.
3. Mix until a flour forms.
4. Add the beets, chickpeas, garlic, and soy sauce to the food processor.
5. Blend until well combined.
6. Use your hands to form the mixture into patties and place them onto the prepared baking sheet.
7. Bake for 15 - 20 minutes per side.
8. Serve on a bun with your favorite toppings and condiments.
