You can mix it up ahead of time and enjoy it whenever you are ready for a yummy sweet treat. And you can make this delicious ice cream with or without an ice cream machine.

Ingredients you'll need
- Sugar. I use light brown sugar for some rich sweetness.
- Salted caramel sauce. You can use store-bought or make your own. I have a recipe for Homemade Salted Caramel that is delicious and works beautifully in this ice cream.
- Butter. Creates the rich, creamy base for the ice cream.
- Vanilla extract. Adds delicious vanilla flavor to the ice cream which enhances its yummy taste.
- Milk. I use whole milk for a rich and creamy end result.
- Cream. Heavy cream is best for smooth, creamy ice cream.
- Eggs. To thicken up the ice cream base and add some yummy richness.
Optional Additions & Serving Suggestions
- Fold in chocolate chips or chopped chocolate before freezing.
- Drizzle with caramel sauce before serving.
- Fold in chopped, roasted nuts or sprinkle over top before serving.
- Serve the ice cream with your favorite crushed biscuits.
- Sprinkle with extra flaked salt

How to make caramel ice cream using a Thermomix
STEP ONE
Place the sugar into your Thermomix bowl and mill 20 seconds/speed 9.
STEP TWO
Add the salted caramel, butter, and vanilla extract and cook 10 min/Varoma/speed 1.
STEP THREE
Add the cream and milk and whisk together 30 sec/speed 5.
STEP FOUR
Add the eggs and beat 30 sec/speed 4.
STEP FIVE
Cook the ice cream mixture 5 min/80ºC/speed 4. Then turn off your Thermomix and allow the ice cream mixture to cool completely. You can then add it to an ice cream machine and follow its recommended settings or see below for a no-churn alternative.
No-Churn Method:
Pour the ice cream mixture into a cold metal tin and freeze for 3 - 4 hours.
Your ice cream will then be partially frozen. Add it to your Thermomix and mix 1 min/speed 5 to give a creamy consistency
Fold in any ice cream additions and then return to cold tin and freeze for up to 12 hours before serving.

Recipe Notes & Tips
- It is helpful to place the frozen ice cream in the fridge for about 20 minutes prior to serving for ease.
- Place your tin/container in the freezer before adding the ice cream mixture to help it to set quicker.
- This ice cream can be stored in your freezer for up to 3 months in a sealed, airtight container.
