Pumpkin EVERYWHERE!! Pumpkin in your donuts, pumpkin in your pancakes... and pumpkin in your latte. I'm not complaining!! I love hot drinks, I could drink hot chocolate every day, no matter what season it is. But this Salted Caramel Pumpkin Spice Latte is definitely my new favourite. It is absolutely soul "warmingly" delicious. Not only does it warm your soul  and your stomach, but it fills your home with a delicious warm scent and feelings of family and Christmas.

Although this time of year is always filled with exciting holiday plans and family lunches. For me this time of year is somehow often filled with "what am I gonna do next years?". This year is no different, and that means I've got big life decisions to make again. I have to decide between postgraduate studies, travelling, working OR and currently my top choice, Pastry School. I have always loved baking, and whipping up desserts but I've never thought of actually making it "official". But it would definitely be a dream come true.

I still had a little bit of yesterday's Salted Caramel Sauce left, so I thought why not whip up a few Pumpkin Spice lattes and top it with a little salted caramel. The flavours seem to blend so well together, the sweetness of the caramel, the spicy of the pumpkin flavours and then just that hint of salt seems to just round it off. It is absolutely to die for.

How to store

The one thing I love about this Salted Caramel Pumpkin Spice Latte recipe is that you can make a whole big batch of the pumpkin spice syrup and then simply store it in the fridge and add milk and espresso when ever your in the mood for a pumpkin spice latte (which is everyday for me).

How to make

To make the syrup all you do is place the water, brown/coconut sugar, pumpkin puree and spices in a small pot and allow it to boil for a little while, then bring it down to a simmer until it becomes thick. Then add the vanilla and pour it into a jar to store or into your glasses/mugs to make the lattes.

Then to make the Salted Caramel Pumpkin Spice Lattes all you do is mix together the pumpkin spice syrup, espresso and milk. You can then top it with either normal whipped cream or your own homemade coconut whipped cream (vegan) and then drizzle (or drench) on a little Salted Caramel Sauce or Vegan Salted Caramel.

Lastly, all you have to do is find a good book to read, binge-watch your favourite series and enjoy it!

Salted Caramel Pumpkin Spice Latte

Ingredients

For the Pumpkin Spice Syrup:

  • 1 cup Water
  • ⅔ Cup Brown Sugar/Coconut Sugar
  • ⅓ Cup Pumpkin Puree
  • 1 teaspoon Vanilla
  • 1 teaspoon Cinnamon
  • ½ teaspoon All Spice
  • ¼ teaspoon Nutmeg
  • ⅛ teaspoon Cloves

For the latte:

  • 2 Shots of Espresso
  • 2 Shots Pumpkin Spice Syrup
  • 1 ½ Cups Milk/Almond Milk
  • Whipped cream/Coconut whipped cream.
  • Salted Caramel Sauce/Vegan Salted Caramel.

Instructions 

For the Syrup:

  • In a small pot, mix together the water, sugar, pumpkin and spices.
  • All the mixture to come to a boil and then turn the heat down to allow the mixture to simmer.
  • Simmer until mixture thickens and then add vanilla.

For the Latte:

  • Mix together the syrup, milk and espresso and pour into mugs or glasses.
  • Top with whipped cream and salted caramel.
