- Bananas. The riper the better. As a banana ripens it becomes sweeter and more flavorful so use bananas with dark spots on their peel for best results.
- Baking powder. This is the key to fluffy, light pancakes.
- Vanilla extract. Enhances the yummy flavor of these pancakes.
- Caramel. Adds a delicious rich, deep caramel flavor to the pancakes.
- Eggs. It is best to use room temperature eggs for this recipe.
- All-purpose flour. This can be replaced with 1:1 gluten-free flour for a gluten-free pancake option.
- Oil or butter for cooking. Just a little to coat the bottom of the skillet for cooking the pancakes.

If your pancakes are golden brown on the outside but not entirely cooked through, lower your cooking temperature. This way the pancakes will have more time to cook slowly all the way through. You could also place the pancakes in an oven at 180C/375F for a few minutes for them to firm up.
A simple solution is to just add more baking powder. This will definitely make the pancakes fluffier. Mashed bananas combined with baking powder is a recipe for fluffiness!
This pancake batter can easily be adjusted. If your pancake batter is spreading too much when placed in the pan, whisk in some extra flour into the batter. If your pancake batter isn’t spreading enough and is too thick, add some milk until you reach the right consistency.
