This easy pancake recipe uses a few simple ingredients to make the batter all in just one bowl. The pancakes are cooked in a skillet and should be served warm topped with whichever toppings you prefer.
Ingredients and notes
- Bananas. The riper the better! As a banana ripens it becomes sweeter and more flavorful so use bananas with dark spots on their peel for best results.
- Baking powder. It may seem like a lot of baking powder in this recipe, but this is the key ingredient to making fluffy, light pancakes.
- Vanilla extract. Enhances flavor of these banana pancakes.
- Salted caramel. Adds a delicious rich, deep caramel flavor to the pancakes. I use my Homemade Salted Caramel recipe - but store-bought is also fine.
- Eggs. It is best to use your eggs at room-temperature for this recipe.
- All-purpose flour. This can be replaced with 1:1 gluten-free flour for a gluten-free pancake option.
- Oil or butter for cooking. Just a little is needed to coat the bottom of the skillet for cooking the pancakes.

How To Make Banana Pancakes with Salted Caramel
STEP ONE
Mash the bananas. Place the bananas in a large mixing bowl and mash well with a fork until only small bits remain.
STEP TWO
Add vanilla extract and baking powder. Once the bananas are well mashed, add the baking powder and vanilla extract and mix together until combined.

Add eggs and caramel. Add the eggs and salted caramel and whisk together until combined.
