One of the best parts of this banana bread granola is that it makes your whole house smell like baking banana bread - which is one of the best smells ever! This recipe is full of delicious spices, banana, and vanilla so the smell is truly heavenly.

Ingredient Notes
- Banana - Bananas sweeten as their peels get darker, but the banana flavor also gets stronger. Use a really ripe banana for the sweetest banana flavor.
- Coconut Oil - You could really use any kind of light flavored cooking oil or even melted butter, but I love the flavor added by coconut oil.
- Maple Syrup - A little maple syrup helps to sweeten the granola. Sugar is needed during the baking process to make the oats clump together in those big chunky granola pieces we all love!
- Vanilla - Vanilla extract adds a little more sweetness to the flavor of this banana granola.
- Oats - Use old-fashioned rolled oats for the best results. If you're following a gluten free diet, use certified gluten free oats.
- Cinnamon, Nutmeg and Allspice - This combination of spices is what really brings out the banana bread flavor in this recipe.
- Salt - Just a pinch of salt is added to balance out the sweet flavors.
- Pecans - I love pecans and bananas together! If you don't have any pecans on hand, walnuts would make a great substitute.
- Oat Flour - You can buy oat flour in the store, but it's super simple to make at home if you don't have access to it. Just add oats to your high speed blender or food processor and process until it is a powder.

It is so easy to make granola at home!
- MIX: Combine the wet ingredients together and then combine that with the dry ingredients. Make sure everything is mixed and coated well.
- BAKE: Spread the granola mixture on a lined baking sheet. Stir a few times during baking to make sure it gets evenly browned.

Once the granola is done baking, do not stir it while it cools. As it cools it will clump together making nice big granola chunks.
Storage

Banana Bread Granola
Ingredients
- 1 Banana about ⅓ cup, mashed
- ½ Cup Maple Syrup
- ¼ Cup Coconut Oil melted
- 2 teaspoons Vanilla Extract
- 3 Cups Old-Fashioned Rolled Oats
- ½ Cup Pecans roughly chopped
- ¼ Cup Oat Flour
- 2 ½ teaspoons Ground Cinnamon
- 1 teaspoon Allspice
- ½ teaspoon Nutmeg
- 1 pinch Salt
Instructions
- Preheat oven to 300 °F (149 °C) and line a baking tray with baking paper.
- In a small mixing bowl, combine the mashed banana, melted coconut oil, maple syrup, and vanilla.1 Banana, ½ Cup Maple Syrup, ¼ Cup Coconut Oil, 2 teaspoons Vanilla Extract

- Add the wet ingredients into the dry ingredients and fold together until everything is well coated.
- Spread out on your prepared baking sheet. Bake in the preheated oven for 35-45 minutes, stirring every 15 minutes.
- Remove the baked granola from the oven and cool completely before stirring. Do not stir the granola while it is cooling.
