These baked oats are full of fresh raspberries, spices, milk, and eggs. It's an absolutely delicious breakfast that is perfect for any time of the year.

So what is baked oatmeal?
Baked oatmeal are oats that have been combined with other ingredients like milk, eggs and fruit then baked. The oatmeal is normally baked in a casserole dish and is a great breakfast option to feed a crowd.
Baked oatmeal is cut into squares for serving - it is almost like a breakfast cake. It can be enjoyed warm as is or with toppings like maple syrup and yogurt. Baked oatmeal is easy to prepare, inexpensive, and can be stored in the fridge or freezer.
Ingredient Notes
- Oats - I would recommend using old fashioned rolled oats for best results. If you follow a gluten free diet use certified gluten free oats.
- Spices and flavorings - Cinnamon, nutmeg, salt, and vanilla extract. Don't be shy to add a little extra than what the recipe suggests if desired.
- Milk - Any milk will work fine in this recipe. If you're dairy free, use your favorite non-dairy milk.
- Oil - I prefer to use liquid coconut oil in this recipe, but any type of light flavored cooking oil will work fine.
- Butter - Since we are adding salt to the recipe, use unsalted butter.
- Raspberries - Fresh, ripe raspberries are delicious in this baked oatmeal. If you don't have raspberries on hand, substitute with your favorite berry.
Optional Add-Ins
- Chocolate chips: milk, dark, or white chocolate
- Nuts: almonds, pecans, or walnuts
- Dried fruit: raisins, apricots, or cranberries
- Coconut: desiccated or coconut flakes
How to Make Raspberry Baked Oatmeal
Preheat the oven and spray your dish with non-stick spray. You can also brush your dish with coconut oil instead of using cooking spray.
STEP ONE: Add the oats, brown sugar, baking powder, nutmeg, cinnamon and salt to a large mixing bowl and stir to combine.
STEP TWO: In a separate bowl, combine the milk, coconut oil, melted butter, egg and vanilla extract.
STEP THREE: Pour the wet ingredients into the dry ingredients and stir until combined.
STEP FOUR: Gently fold the raspberries into the oat mixture.
STEP FIVE: Spread the raspberry oatmeal into your prepared baking dish and bake.
Storage
Once your baked oatmeal has cooled, cover it with plastic wrap and place it in the refrigerator. When you're ready for a little more, cut a slice and pop it in the oven or microwave for a few minutes to warm up. Alternatively, place the entire baking dish in the oven for 10 - 15 minutes or until warmed to serve a crowd.
The baked oatmeal can be stored in an airtight container for up to 7 days in the refrigerator. The baked oatmeal can also be cut into squares and frozen in an airtight container for up to 2 months.

Raspberry Baked Oatmeal
Ingredients
- 3 Cups Old-Fashioned Rolled Oats
- 1 Cup Light Brown Sugar
- 2 teaspoon Baking Powder
- 2 teaspoon Ground Cinnamon
- 1 teaspoon Nutmeg
- ¼ teaspoon Salt
- 1 Cup Milk any preferred type
- ⅓ Cup Coconut Oil
- 2 Eggs
- 3 teaspoon Vanilla Extract
- 2 Tablespoon Butter melted
- 1 ½ Cups Fresh Raspberries
Instructions
- Preheat your oven to 350ºF and spray a 9x13 inch baking dish with non-stick spray or brush with coconut oil.
- In a large mixing bowl, combine the rolled oats, sugar, cinnamon, nutmeg, baking powder and salt. Stir well.3 Cups Old-Fashioned Rolled Oats, 1 Cup Light Brown Sugar, 2 teaspoon Baking Powder, 2 teaspoon Ground Cinnamon, 1 teaspoon Nutmeg, ¼ teaspoon Salt
- In a separate mixing bowl, whisk together the milk, coconut oil, eggs, vanilla and melted butter.1 Cup Milk, ⅓ Cup Coconut Oil, 2 Eggs, 3 teaspoon Vanilla Extract, 2 Tablespoon Butter
- Add the wet ingredients to the oat mixture and stir until combined.
- Add the raspberries and gently fold them into the mixture.1 ½ Cups Fresh Raspberries
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake the oatmeal for 25-28 minutes or until golden.
