Blackberry Lemonade Jello - An elegant dessert that is refreshing, beautiful and so easy to make. The perfect dessert for any party.
Layered Jello recipe
One of my favorite things I have made has been that amazing 3 Layered Watermelon Jelly. I made that on a day I was totally and utterly inspired by watermelon. I just walked into the kitchen carrying an entire watermelon and just came up with that recipe.
It was so incredibly light and refreshing, a perfect summer's day dessert. That is why I decided to give that concept another go, and if I may say so myself, I have outdone myself.
This Blackberry Lemonade Jelly is so delicious. A layer of sweet/sour lemonade (actual lemonade) balanced out with a layer of blackberries...it is divine.
My favorite thing about both the Watermelon Jelly, as well as the Blackberry Lemonade Jelly, is how beautiful and elegant it looks. It looks like something from a 5 Star restaurant without any of the actual efforts. It pretty much impresses anyone and everyone.
A light and refreshing dessert
The downside to the Blackberry Lemonade Jelly is that you have to wait for one layer to set before you can add the next. But it honestly is incredibly easy to make and totally worth the wait because it is so darn delicious.
It is not heavy at all, which is often the problem with desserts. You can be so full from dinner or lunch that you literally can't fit in any dessert.
So this Blackberry Lemonade Jelly is the perfect solution to that because it isn't rich or filling, just delicate and delicious and so beautifully refreshing.
To set the Jelly, I used Gelatin Powder. You can easily swap that out for Gelatin Leaves and if you want to make a vegan version you can use Agar Agar to set the jelly.
I am a little unsure about the amount you should use, but normally it works when I use the same amount of Agar Agar Powder as I would Gelatin Powder. Sometimes a tiny bit less works better.

Blackberry Lemonade Jelly
Ingredients
Blackberry Layer:
- 3 Cups Water
- 1 Cup Castor Sugar
- 1 Cup Blackberries fresh or frozen
- 30 g 3 Sachets Gelatin Powder/Agar Agar Powder
- ¼ Cup Cold Water
Lemonade Layer:
- 3 Cups Water
- 1 Cup Lemon Juice
- 1 Cup Castor Sugar
- 30 g 3 Sachets Gelatin Powder/Agar Agar Powder
- ¼ Cup Cold Water
Instructions
Blackberry Layer:
- Place the gelatin powder in a bowl with the ¼ cup cold water and set it aside to bloom.
- Meanwhile, place the remaining ingredients in a sauce pan over medium heat.
- Allow the mixture to lightly simmer for at least 20min until the blackberries start to breakdown.
- Strain the mixture and stir in the gelatin.
- Pour the mixture into a pan or dish and place in the fridge for at least 4 hours to allow it to set.
Lemonade Layer:
- Place the gelatin powder in a bowl with the ¼ cup cold water and set it aside to bloom.
- Meanwhile, combine the remaining ingredients in a saucepan over medium heat and bring to a simmer.
- Allow to mixture to simmer for about 10min, stirring constantly and ensuring all the sugar has dissolved.
- Remove the mixture from the heat and stir in the gelatin.
- Allow the mixture to cool slightly, then pour it over the blackberry layer.
- Place the dish back into the fridge for at least another 4 hours.
- Cut the jelly into squares and top with fresh blackberries.
