Instructions
Blackberry Layer:
Place the gelatin powder in a bowl with the ¼ cup cold water and set it aside to bloom.
Meanwhile, place the remaining ingredients in a sauce pan over medium heat.
Allow the mixture to lightly simmer for at least 20min until the blackberries start to breakdown.
Strain the mixture and stir in the gelatin.
Pour the mixture into a pan or dish and place in the fridge for at least 4 hours to allow it to set.
Lemonade Layer:
Place the gelatin powder in a bowl with the ¼ cup cold water and set it aside to bloom.
Meanwhile, combine the remaining ingredients in a saucepan over medium heat and bring to a simmer.
Allow to mixture to simmer for about 10min, stirring constantly and ensuring all the sugar has dissolved.
Remove the mixture from the heat and stir in the gelatin.
Allow the mixture to cool slightly, then pour it over the blackberry layer.
Place the dish back into the fridge for at least another 4 hours.
Cut the jelly into squares and top with fresh blackberries.
