3-Layer Watermelon Gelatin Cubes... whaaat? Okay I know it sounds like something either from space or from Masterchef (let's go with this one), but I'm telling you these are one of the easiest "fancy" desserts to make!

They are striking, delicious, and full of melon flavor. These sweet treats are always a hit! They take a bit of time to make, but it is so worth it.

Christmas time in South Africa is amazing. It is unlike how I would imagine it to be on the Northern side of the world. Even though it always looks so magical and cosy to have a white Christmas, there is something to be said about a HOT Christmas as we have over here.

The days are long and sunny, and everyone is relaxed, having cocktails around the pool, it is just such a happy and festive time. But the last couple of days has just been unbearably hot. To the point where you just can't do anything. This is where WATERMELON comes to the rescue.

A refreshing, layered dessert

If I am one hundred percent honest, watermelon isn't exactly my favorite fruit. But when on hot days like today (and pretty much every day lately) watermelon does tend to get the job done in terms of cooling you down.

So in the spirit of making things look festive and also making things a whole lot cooler, I made this pretty darn cool-looking dessert, the 3-Layer Watermelon Gelatin Cubes.

Three Simple Watermelon Layers

These Jello Cubes are simple to make, they look amazing and they taste delicious and fresh. As the name says, it consists of 3 layers.

The base layer is purely watermelon. The middle layer is a watermelon and creamy yogurt layer. And the top layer is a sweet and creamy condensed milk layer. Sounds fabulous doesn't it?

3 Layer Watermelon Gelatin Cubes isn't a fancy dessert, even though it may look that way. It is actually just jelly, but add 2 more layers and cut it into cubes, and bam! you have an amazing-looking dessert that both adults and kids will love.

Equipment

  • Square tin

Ingredients

Watermelon Layer:

  • 3 Cups Fresh Watermelon Juice
  • ¼ Cup Castor Sugar
  • 1 tablespoon Lemon Juice
  • 30 grams Gelatin Powder
  • ½ Cup Cold Water

Yoghurt Layer:

  • 3 Cups Fresh Watermelon Juice
  • ¾ Cup Castor Sugar
  • 2 Cups Greek Yoghurt
  • 2 teaspoon Vanilla Extract
  • 40 grams Gelatin Powder
  • ½ Cup Cold Water

Condensed Milk Layer:

  • 1 Tin Condensed Milk
  • ¼ Cup Milk
  • 1 teaspoon Vanilla Extract
  • 20 Gelatin Powder
  • ¼ Cup Cold Water

Instructions 

For the Watermelon Layer:

  • Place the gelation in the cold water for 10min. Then place the gelatine mixture in a hot water bath to allow the gelatin to melt.
  • Meanwhile, place the remaining ingredients in a saucepan and allow to simmer.
  • Stir until sugar is dissolved.
  • Remove from the heat and stir in the melted gelation.
  • Pour into a square cake tin (sprayed with cook n spray) and place in the fridge to set (about 4 hours).

For the Yoghurt Layer:

  • Place the gelation in the cold water for 10min. Then place the gelatine mixture in a hot water bath to allow the gelatin to melt.
  • Meanwhile, place the watermelon juice and sugar in a saucepan and allow to simmer, stirring until the sugar has melted.
  • Lower heat and stir in the yoghurt and vanilla. Stir until well incorporated.
  • Remove from heat and stir in the melted gelatin.
  • Allow the mixture to cool and pour gently over watermelon layer.
  • Place back in the fridge for at least 4 hours.

For the Condensed Milk Layer:

  • Place the gelation in the cold water for 10min. Then place the gelatine mixture in a hot water bath to allow the gelatin to melt.
  • Mix the remaining ingredients together in a saucepan over medium heat.
  • Remove from heat and stir in melted gelatin.
