I've been loving summer here in Cape Town. It's my second summer here since moving down here from Pretoria and man I can't believe I haven't moved here sooner. Last year I was still getting into the swing of things, everything was still new and somewhat overwhelming. A new city, a new job and a whole lot of new people. It can get quite exhausting after a while. This year, it feels more like home.
The unfamiliar people are now my closest friends, and work is going really well. So with everything being a little less unfamiliar, I'm able to really enjoy the Western Cape in all its glory. Okay, enough gushing about this place I call home and back to these little guys! If you don't know by now, I flipping love energy balls/bliss balls. They satisfy my need for something sweet and decadent. They truly help keep my blood sugar stable and ultimately they are just darn delicious with a cup of coffee. These Cranberry Nut Energy Balls are the perfect combo of sweet, crunchy, chewy and everything in between. They are even a perfect snack idea for kids. I make a whole batch of them on a Sunday then keep them in the fridge. Then whenever I'm feeling a little peckish I'll opt for one of those instead of something naughty like a chocolate!
Recipe
Cranberry Nut Energy Balls
Ingredients
- ¼ Cup Almonds roughly chopped
- ⅓ Cup Dried Cranberries
- 1 tablespoon Coconut Oil melted
- 1 tablespoon Pumpkin Seeds
- ½ Cup Nut Butter melted
- 1 Cup Rolled Oats
- ¼ Cup Honey/Maple Syrup
Instructions
- Mix all the ingredients together in a mixing bowl until completely combined.
- Roll the mixture into balls (you choose your size)
- Store them in a tupperware in the fridge.
