1. Season the chicken.
2. Heat the olive oil in a skillet.
3. Cook chicken for 5 - 7 minutes per side.
4. Remove the chicken from the skillet and add the butter.
5. Add the garlic & onion & cook for 2 - 3 minutes..
6. Add the tomatoes & spinach & cook until spinach has wilted.
7. Add the cream & dried herbs & simmer for 5 minutes.
8. Stir in the parmesan & add the chicken back to the skillet.
9. Allow to heat for 2 minutes and then serve with fresh basil.
