Coconut Oil
melted

Milk
or preferred milk alternative

Xylitol
or any other sugar alternative.

Flour
▢
1 ½
Cup
Blueberries
fresh or frozen
▢

teaspoon
Vanilla Essence
▢

teaspoon
Baking Powder
Instructions
Preheat oven to 180ºC/350ºF.
Line a cupcake pan with cupcake papers.
In a mixing bowl, beat together the xylitol, vanilla, egg, and coconut oil.
Add the flour and milk, and mix until just combined.
Fill cupcake papers with batter until ¾ full.
Place 5-10 blueberries on top of each cupcake.
Bake for 15 minutes.
Allow to cool and then devour!
