Blueberry Muffins

Ingredients

  • ½ Cup Coconut Oil melted
  • 1 Egg or flax egg
  • ½ Cup Milk or preferred milk alternative
  • ½ Cup Xylitol or any other sugar alternative.
  • 1 Cup Flour
  • 1 ½ Cup Blueberries fresh or frozen
  • 2 teaspoon Vanilla Essence
  • 2 teaspoon Baking Powder

Instructions 

  • Preheat oven to 180ºC/350ºF.
  • Line a cupcake pan with cupcake papers.
  • In a mixing bowl, beat together the xylitol, vanilla, egg, and coconut oil.
  • Add the flour and milk, and mix until just combined.
  • Fill cupcake papers with batter until ¾ full.
  • Place 5-10 blueberries on top of each cupcake.
  • Bake for 15 minutes.
  • Allow to cool and then devour!
