This delightful mixed berry crisp is the best way to showcase fresh berries. The crunchy oat crisp topping is the perfect compliment to juicy, sweet berries.
Preheat oven to 350 °F (177 °C) and grease a 9x5 baking dish.
Add the mixed berries, sugar, cornstarch and cinnamon to the baking dish. Stir well.
2 Cups Mixed Berries, 2 Tablespoons Sugar, ½ Tablespoon Cornstarch, ½ teaspoon Cinnamon
Combine the oats, flour, brown sugar and salt in a mixing bowl. Stir to mix.
½ Cup Rolled Oats, ½ Cup All-Purpose Flour, ¼ Cup Light Brown Sugar, pinch Salt
Rub in the cold butter with your fingers until coarse crumbs form.
¼ Cup Butter
Evenly sprinkle the topping over the berries mixture.
Bake 35 - 40 minutes, or until the topping is golden brown and the filling is bubbling.
Leave the mixed berry crumble to stand for 5 - 10 minutes so that the filling can set. And then serve as is, or with ice-cream or custard.
Notes
BERRIES: Use your favorite mix of fresh or frozen berries. Some of my favorite combinations are blueberries with strawberries or blackberries with blueberries.STORAGE: The crumble can be stored in an airtight container in the fridge for up to five days or in the freezer for up to three months.
