These delicious carrot cake protein balls are a quick and easy snack that will cure your sweet tooth. Made with fresh carrots, coconut and no dates - it's the perfect vegan sweet treat!
Add all of the ingredients to a large mixing bowl.
1 Cup Old-Fashioned Rolled Oats, ½ Cup Carrots, ¼ Cup Desiccated Coconut, 3 Tablespoons Tahini, 3 Tablespoons Maple Syrup, 2 Tablespoons Coconut Oil, 1 teaspoon Ground Cinnamon, 1 scoop Protein Powder
Mix together until well combined.
Once the mixture is the right consistency and well combined, shape and roll it into bite-sized balls.
Roll the balls in extra desiccated coconut and store in a refrigerator for up to a week.

Too Dry - If the mixture is too dry, add a little extra tahini or nut butter.
Too Sticky - Add a little extra desiccated coconut. You can always add a little desiccated into the mixture before forming the energy balls.
Sizing - To get the perfect sizing, use a cookie scoop to get even sizes.
Wet Hands - Before forming the balls, wet your hands a little. This makes the process a little less messy and helps the batter to not stick to your hands.
STORAGE: Store protein balls in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 10 days.
