Apple Loaf Cake with Caramel & Cream Cheese Frosting

his easy Apple Cinnamon Loaf Cake is deliciously moist and can be made in one bowl. It is full of crunchy nuts, chunks of fresh apple, and cozy cinnamon flavor. Pile on the dreamy cream cheese frosting and a drizzle of caramel and it is the perfect companion for a warm cup of tea or coffee. (Gluten-Free)

Ingredients

  • 1 cup oat flour
  • ½ cup cornflour
  • 1 cup granulated sugar
  • ¼ teaspoon baking soda
  • 1 pinch salt
  • ½ cup coconut oil
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 2 teaspoon ground cinnamon
  • ¼ cup milk (or nut milk)
  • 2 green or pink apples roughly chopped
  • ½ cup walnuts chopped

CREAM CHEESE FROSTING

  • ¼ cup butter softened
  • 115 grams cream cheese
  • ½ cup powdered sugar
  • Caramel for topping

Instructions 

  • Preheat oven to 180ºC/350ºF and line a loaf tin with baking paper.
  • In a mixing bowl, whisk together both flours, sugar, salt, and baking soda.
  • Add the vanilla, oil, milk, and eggs.
  • Using an electric mixer, beat together until well combined.
  • Fold in the apples and walnuts.
  • Pour the batter into the prepared loaf tin and bake for 35 - 45 minutes.

CREAM CHEESE FROSTING

  • Using an electric mixer, beat the cream cheese and butter together until smooth and creamy.
  • Add the powdered sugar and mix until well combined.
  • Once the loaf has cooled completely, add the frosting and drizzle the caramel over top.

Notes

  • I used my easy Homemade Caramel Sauce recipe for my topping.
  • To Store Apple Loaf: You can enjoy this apple loaf cake for up to 3 days after baking if stored at room temperature. Store the bread in an airtight container to best retain its moisture. If you store the pumpkin bread in the fridge, it will last for up to a week.
    To Freeze Apple Loaf: This apple loaf freezes well and can be stored in the freezer for up to 3 months. You can freeze it with or without the cream cheese glaze. To defrost it, remove the loaf from the freezer and allow the bread to reach room temperature before enjoying.
