1. In a large pot over a medium-high heat, add the olive oil and allow to heat.
2. Add the onions and garlic and fry for 2 - 3 minutes, or until onions are soft and translucent.
3. Add the celery & carrots, & cook for 2 - 3 minutes.
4. Add the remaining vegetables & the dried herbs, & seasoning.
5. Bring to a boil & simmer gently for 45 minutes.
6. Add the garden peas just before serving.
