1. Roast vegetables
Place the pumpkin, carrot, garlic, & thyme in a large roasting dish. Drizzle with olive oil & season with salt & pepper. Roast for 25 - 35 minutes.
2. Cook the onion, celery, & spices.
In a large saucepan over a medium heat, cook the onion and celery until softened. Then add the spices and cook for 1 minute
3. Add remaining ingredients & blend.
Add the roasted vegetables, lentils, broth, & coconut milk to the saucepan & simmer for 15 minutes. Then blend the soup until it is smooth & creamy. Serve & enjoy!
