- Oil - Yellow onion - Sweet potato - Fresh garlic - Lentils - Coconut milk - Garnish

INGREDIENTS  YOU WILL NEED:

Fry the onions & garlic. Heat oil over a medium-high heat.  Add the diced onions , coriander seeds and garlic. Fry for about 3 minutes, or until the onions have softened.

HOW TO MAKE VEGAN LENTIL AND SWEET POTATO CURRY

Add sweet potatoes and lentils. Lower the heat and add the lentils, spices, sweet potatoes, tomatoes and coconut milk. Mix and bring to a simmer.

Allow to cook. Cover the pot with a lid and allow to cook for 30 minutes. Once cooked, stir in the baby spinach.
