Biscoff Butter Cookies

– 125g butter, softened – 125g Biscoff Spread (or homemade cookie butter spread) – 50g granulated sugar – 100g light brown sugar – 2 tsp vanilla extract
Combine butter, Biscoff spread and both sugars. Cream until light and fluffy.
Add egg and vanilla extract then continue to mix batter.
Add the dry ingredients to the butter mixture and mix until just combined.
Fold in the chocolate chips and chopped lotus biscuits.
Roll batter into balls and bake for 10-12 minutes. Allow to cool.
