Carrot Cake Cinnamon Rolls

Ingredients

Dough

  • 1 cup Nestlé Ideal Milk
  • 75 grams butter
  • ½ cup granulated sugar
  • 1 pinch salt
  • 4 ½ teaspoon rapid rise yeast (2 packages)
  • 4 cups flour
  • 1 egg

Filling

  • 75 grams butter softened
  • ¾ cup brown sugar
  • 1 cup grated carrots
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon all spice
  • ¼ cup raisins optional

Frosting

  • 120 grams cream cheese softened
  • 3 tablespoon butter softened
  • 1 tablespoon vanilla essence
  • 1 ½ cups powdered / icing sugar sifted

Instructions 

Dough

  • In a small saucepan over medium heat, add the Nestlé Ideal Milk, granulated sugar, salt, and butter. Heat until the butter melts and then allow to cool for 10 minutes.
  • In the bowl of a stand mixer, combine 2 cups of flour and the yeast.
  • Once the butter mixture has cooled, add it to the stand mixer and mix with the dough hook attachment on low. Add the egg and combine.
  • Add the remaining 2 cups of flour, a ½ cup at a time (You may not need it all). Knead the dough for 5 minutes on low. If the dough seems a bit sticky, mix in some extra flour until the dough starts pulling away from the mixing bowl.
  • Cover and rest the dough for 10 minutes.

Filling and Assembling

  • In a small bowl, mix the filling ingredients together until well combined.
  • Flour a surface and tip out the rested dough onto it.
  • Knock out the air from the dough and roll into a rectangle. (The dough should be 1 - 1.5 cm thick.)
  • Add the filling and evenly spread it out over the rectangle.
  • Roll the dough into a tight log starting from the shorter side. (Push in the sides as you roll so it stays uniform.)
  • Slice into 9 - 12 equal pieces and place into a well-greased dish. Cover and let the dough rise for 30 - 35 minutes.
  • Once risen, bake at 180C for 20 - 25 minutes, or until golden brown and entirely cooked through.

Cream Cheese Frosting

  • In a mixing bowl, cream the cream cheese and butter together until soft and creamy.
  • Mix in the vanilla essence and the sugar ½ cup at a time until preferred consistency is met.
  • Once rolls have been removed from the oven, frost using half the amount of frosting made. Then after they have cooled entirely, frost the rolls with the remaining frosting.
