Banana Bread Granola

Ingredients

  • 1 banana mashed
  • ¼ cup coconut oil melted
  • ½ cup agave/maple syrup or honey for a non-vegan option
  • 2 teaspoon vanilla essence
  • 3 cups rolled oats
  • 2 ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon allspice
  • 1 pinch salt
  • ½ cup pecan nuts roughly chopped
  • ¼ cup oat flour

Instructions 

  • Preheat oven to 180ºC and line a baking tray with baking paper.
  • In a small mixing bowl, combine the mashed banana, melted coconut oil, honey, and vanilla.
  • In a separate bowl, combine all the remaining dry ingredients together.
  • Once the dry ingredients are well combined, add the banana mixture.
  • Mix well and spread out on the prepared baking tray.
  • Bake for 35 - 45 minutes, mixing halfway through.
