Zesty Citrus Cupcakes

Ingredients

Cupcakes

  • 1 ½ cups flour
  • ¾ cup sugar
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • ½ cup oil
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 2 tablespoon orange zest

Frosting

  • 2 cups icing sugar sifted
  • ½ cup butter
  • 2 tablespoon orange zest

Instructions 

Cupcakes

  • Beat oil, eggs, sugar, and vanilla essence together until light and fluffy.
  • Mix in dry ingredients, milk, and orange zest.
  • Fill each cupcake mould until ¾ full.
  • Bake for 10 to 15 minutes at 180°C.
  • Let cupcakes cool completely before frosting.

Frosting

  • Cream butter until light and fluffy.
  • Beat in icing sugar and orange zest.
  • Pipe frosting onto cooled cupcakes and enjoy!
