Easy Moist Banana Muffins

These Easy Moist Banana Muffins are the perfect on the go breakfast, only take a few minutes to whip up and are simply delicious. The perfect alternative to banana bread.

Ingredients

  • ¾ cup butter soft
  • 3 eggs
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2 ½ cups flour
  • ½ tsp bicarbonate of soda
  • 3 ripe bananas mashed
  • 1 teaspoon baking powder
  • 3 teaspoon vanilla essence
  • ¾ cup buttermilk
  • 1 teaspoon cinnamon

Instructions 

  • Preheat the oven to 180ºC and spray the muffin pan with non-stick spray.
  • Place the butter and both sugars in a mixer fitted with a paddle attachment
  • Cream together then add the vanilla, mashed bananas, buttermilk and eggs.
  • Meanwhile, whisk together the remaining ingredients.
  • Add the dry ingredients to the wet ingredients and mix until just combined.
  • Fill the muffin tin (about ¾ full) and bake for 15-20 minutes or until golden brown.
  • Serve with a dollop of butter or add a little frosting to turn these beauties into banana cupcakes.
