Easy Homemade Lemon Curd

Servings 2 Jars of Lemon Curd

Ingredients

  • Juice & Zest of 5 Lemons about 1 cup juice.
  • 1 ¼ Cups Sugar
  • 6 Egg Yolks.
  • ¾ Cup Butter.

Instructions 

  • In a bowl, combine the lemon zest and sugar and using your fingers rub the zest and lemon together to extract the flavours.
  • Then add all the ingredients together in a pot and cook over medium heat, ensuring that you are whisking the mixture constantly.
  • Continue to cook the mixture, while stirring, until it starts to thicken (about 10min).
  • Then pour the mixture into clean jars and allow the lemon curd to cool and thicken some more.
  • Store them in the fridge.
