In a bowl, combine the lemon zest and sugar and using your fingers rub the zest and lemon together to extract the flavours.
Then add all the ingredients together in a pot and cook over medium heat, ensuring that you are whisking the mixture constantly.
Continue to cook the mixture, while stirring, until it starts to thicken (about 10min).
Then pour the mixture into clean jars and allow the lemon curd to cool and thicken some more.
Store them in the fridge.
