Salted Caramel Chocolate Tart

Servings 1 Large Salted Caramel Chocolate Tart

Ingredients

For the Crust:

  • 2 ½ Cups Flour
  • 2 tablespoon Cocoa
  • 2 teaspoon Icing Sugar
  • 6 tablespoon Ice Water
  • 250 g Cold Butter/1/2 Cup Cold Coconut Oil

For the Ganache Layer:

  • 450 g Dark Chocolate
  • 250 ml Cream/Coconut Milk
  • Salted Caramel or
  • Vegan Salted Caramel

Instructions 

To make the crust:

  • In a food processor, combine the flour, icing sugar, cocoa and salt.
  • Add the butter, then the cold water 1 tablespoon at a time until the dough starts to pull together.
  • Shape dough into a ball, press flat, cover in plastic wrap and chill for an hour.
  • Once chilled, roll out dough and transfer to a tart pan/flan dish and press into pan.
  • Place baking paper over the dough and fill the pan with baking beans or any beans.
  • Bake at 180ºC/350ºF for 20-25min.

To make the Ganache:

  • Break the chocolate into a glass bowl, pour over the cream and mix.
  • Place the bowl in the microwave and stir every 30 seconds until the chocolate is completely melted.
  • Stir well, then pour over cooled tart crust and place in the fridge to allow the chocolate to harden.
  • Lastly, once the chocolate layer has cooled, pour the Salted Caramel over the chocolate layer, place the dish back in the fridge and allow to set for at least 2 hours.
  • Devour!
