Sterilise Jars by placing them in the dishwasher or by placing them in the oven at 120ºC.
Pour coconut milk into a medium sized pot and stir until smooth.
Sprinkle the agar agar over the coconut milk and place the pot on the stove over medium heat.
Allow the milk to simmer.
When the milk begins to simmer, turn the heat down to low and gently whisk the milk until the agar agar has mixed in completely.
Remove from heat and allow to cool till room temperature.
When cooled, add the probiotics, vanilla and xylitol and stir until completely mixed in.
Pour mixture into jars and close properly.
Place jars in the oven with only the oven light on and leave it there over night (at least 12 hours).
Remove from oven and place in the fridge for another 12 hours.
Enjoy and store in jars in the fridge for at least a week.
