This quick & easy Matcha Sheet Cake recipe is a real winner! The soft, moist cake is topped with fluffy, creamy frosting, making it the dream cake for matcha lovers.
In a mixing bowl, whisk together the eggs, oil, vanilla essence, and milk.
Add the Snowflake Creations Vanilla Cake Mix and matcha powder.
Mix together until just combined.
Pour into the prepared sheet cake pan and bake for 30 minutes, or until cake is completely cooked through.
Matcha Cream Cheese Frosting
With a mixer, cream the butter and cream cheese together until fluffy and lighter in colour.
Add the Snowflake Creations Vanilla Icing Mix and matcha powder. Adjust the amount of matcha powder according to your preference.
Mix together and spread over the cake once it has cooled completely.
Cut into squares and enjoy!
Notes
Always allow the cake to cool completely before frosting it otherwise the frosting could melt off the cake.
To freeze the cake, cut the cake into 8-12 squares before frosting and freeze individually. You can then simply pop them in the microwave for 30 seconds and top them with a little frosting.
Do not overmix the cake batter. Overmixing will result in a tougher and less fluffy sheet cake. A few small lumps in the batter are fine.
