Equipment

  • 1 High-speed blender

Ingredients

  • 1 ½ cups raw cashews
  • 2 tablespoon lemon juice
  • ½ cup coconut cream
  • ¼ teaspoon salt
  • ¼ teaspoon white vinegar

Instructions 

  • Soak cashews in hot water for one hour.
  • Drain cashews and place in a blender.
  • Add the remaining ingredients.
  • Blend until smooth and creamy.

Notes

This yummy Cashew Cream Cheese will last for up to five days covered in a fridge. It can also be frozen in an airtight container for up to three months.
