Healthy Pecan Banana Bread

Ingredients

  • 3 Medium Banana's very ripe
  • Cup Coconut Oil
  • 1 teaspoon Baking Powder.
  • Pinch of salt.
  • 2 teaspoon Vanilla.
  • 1 teaspoon Ground Cinnamon.
  • 1 egg or flax egg.
  • 1 Cup Brown rice flour
  • ½ Cup Coconut Flour
  • ½ Cup Coconut Sugar
  • ¼ Cup Chopped Pecans optional

Instructions 

  • Preheat oven to 180ºC/350ºF.
  • Line bread pan with baking paper.
  • Blend banana's in mixer using the paddle attachment or in a food processor until smooth.
  • Add vanilla, egg and coconut oil and mix together with the banana.
  • Add all the remaining ingredients and ensure that everything is well incorporated.
  • Transfer batter to pan and smooth out.
  • Top with chopped pecans.
  • Bake for 45min or until fork comes out clean.
  • Devour!
