Slow Cooker Pumpkin Soup
A warm, cozy bowl of this velvety smooth soup is exactly what you need on a cold day.
– 2lbs Pumpkin – 2 medium onions – 3 medium potatoes – 4 cups broth – 1 tsp cinnamon – ½ tsp ground nutmeg – Salt & pepper to taste – ¾ cup heavy cream
Add the vegetables, spices, salt, pepper and broth to the slow cooker.
Cook on HIGH for 4 hours or cook on LOW for 7 - 8 hours.
Use a hand-held immersion blender to purée the soup until thick and creamy. This should take a few minutes.
Add the cream and stir to combine. Serve immediately or store in an airtight container to enjoy later.
