This easy and healthy Baked Oatmeal is the perfect Fall breakfast and it is naturally gluten-free.

INGREDIENTS

– • 3 cups rolled oats – • 1 cup light brown sugar – • 2 tsp baking powder – •  ground cinnamon & nutmeg – • 1 tsp nutmeg – • ¼ tsp salt – • 1 cup milk – • ⅓ cup coconut oil – • 2 eggs – • 3 tsp vanilla extract – • 1 ½ cups berries/fruit

1. Prepare your oven & pan.   2. Combine the rolled oats, sugar, cinnamon, nutmeg, baking powder & salt. 3. Whisk together the remaining ingredients. 4. Mix together the wet and dry ingredients.  5. Fold in the fruit. 6. Bake & serve
