The days have been getting longer and warmer and all I want is for the holidays to come already! Flights are booked, bags are mentally packed and my heart is already on the airplane. All I need now is for the time to pass a little faster. I have a whole amazing sunny holiday planned out. First we will be heading to Cape Town for a little family get away, a little ice cream and all the beautiful mountains. Cape Town is simply magical. It is packed with so much beauty and life. Although it is simply stunning, it is the people that draw me towards Cape Town. Everyone there is so friendly and down to earth. It is as if Capetonians take life a little easier than the rest of us, they aren’t bothered by all the stress and pressure as us in the city seem to be. So i’m really looking forward to spending a little time soaking up all the positive vibes.
After Cape Town we will be heading to Durban to do our scuba course. Now this I am excited for, but also incredibly afraid of. I have wanted to dive for as long as I can remember but life always seems to get in the way so it is really something I am looking forward to. BUT… I am scared! I have heard so many horror stories that I have considered calling and cancelling my spot on the course, but I have to live a little right? Take a chance…it can’t be that bad right?
After the scuba course is done we will be able to spend a few days soaking up the sun and swimming in the warm ocean. There is nothing better than lying on the beach, listening to the waves crashing and licking an ice cream. So in the spirit of my warm and “beachy” upcoming holiday, I decided to make these incredibly easy and delicious Vegan Creamy Chocolate Popsicles.
I made these Vegan Creamy Chocolate Popsicles with dark chocolate and Coconut Whipped Cream… That’s it! They are so delicious and healthy. I love making a batch in the beginning of summer and then leaving them in the freezer for whenever I get a craving for something sweet and cool. They really satisfy your need for ice cream. Plus, they are not only vegan, but also sugar free, gluten free and yummy!
